Black Bean and Sweet Potato Bowls

These black bean and sweet potato bowls are a healthy, tasty, and budget-friendly meal prep idea that is perfect for any time of the year. They are high in fiber, protein, and essential nutrients, and they're also vegan and gluten-free. Enjoy!

Ingredients:
  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp. olive oil
  • 1 tsp. chili powder
  • Salt and black pepper to taste
  • 2 cups cooked brown rice
  • 2 cups canned black beans, rinsed and drained
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp. olive oil
  • Juice of 1 lime
  • Fresh cilantro, chopped
    Instructions:
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes in olive oil, chili powder, salt, and black pepper. Roast in the preheated oven for 20-25 minutes or until the sweet potatoes are tender and lightly browned.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red onion, bell pepper, and minced garlic. Cook for 5-7 minutes or until the vegetables are tender.
  4. Add the canned black beans to the skillet and cook for an additional 5 minutes or until the beans are heated through.
  5. To assemble the bowls, divide the cooked brown rice, roasted sweet potatoes, and black bean mixture into individual meal prep containers.
  6. Drizzle each bowl with lime juice and top with fresh cilantro.
