Black Bean and Sweet Potato Bowls

These black bean and sweet potato bowls are a healthy, tasty, and budget-friendly meal prep idea that is perfect for any time of the year. They are high in fiber, protein, and essential nutrients, and they're also vegan and gluten-free. Enjoy!
Ingredients:- 2 medium sweet potatoes, peeled and diced
- 1 tbsp. olive oil
- 1 tsp. chili powder
- Salt and black pepper to taste
- 2 cups cooked brown rice
- 2 cups canned black beans, rinsed and drained
- 1/2 red onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp. olive oil
- Juice of 1 lime
- Fresh cilantro, chopped
- Instructions:
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes in olive oil, chili powder, salt, and black pepper. Roast in the preheated oven for 20-25 minutes or until the sweet potatoes are tender and lightly browned.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red onion, bell pepper, and minced garlic. Cook for 5-7 minutes or until the vegetables are tender.
- Add the canned black beans to the skillet and cook for an additional 5 minutes or until the beans are heated through.
- To assemble the bowls, divide the cooked brown rice, roasted sweet potatoes, and black bean mixture into individual meal prep containers.
- Drizzle each bowl with lime juice and top with fresh cilantro.
