Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice
  • 2 tbsp. olive oil
  • 2 tbsp. fresh thyme leaves, chopped
  • 2 tbsp. fresh rosemary leaves, chopped
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
    Instructions:
  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the lemon juice, olive oil, thyme, rosemary, garlic, salt, and black pepper.
  3. Place the chicken breasts in a shallow dish and pour the marinade over the chicken. Let marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken for 6-8 minutes per side or until the internal temperature reaches 165°F.
  6. Let the chicken rest for 5 minutes before slicing or serving.
  7. Divide the chicken among four meal prep containers and let cool to room temperature before storing in the refrigerator.
