This easy dairy-free vanilla ice cream is rich and creamy, with plenty of rich vanilla flavor. It's perfect for anyone who can't or doesn't want to use an ice cream machine, and it's made with just a few simple ingredients. You can also customize the recipe by adding your favorite mix-ins, like chopped nuts, chocolate chips, fresh fruit or chocolate powder. Enjoy!
Ingredients:- 2 cans full-fat coconut milk
- 1/2 cup granulated sugar
- 1 teaspoon pure vanilla extract
- Pinch of salt
- Instructions:
- In a medium saucepan, whisk together the coconut milk, sugar, vanilla extract, salt, and any other flavorings of your choice.
- Heat the mixture over medium heat, whisking frequently, until the sugar has dissolved and the mixture is smooth.
- Remove the saucepan from heat and let the mixture cool for 5-10 minutes.
- Pour the mixture into a large, shallow container or loaf pan.
- Cover the container with plastic wrap or aluminum foil and place it in the freezer.
- After 30 minutes, use a fork or spatula or whisk to stir the mixture thoroughly.
- Repeat stirring the mixture every 30 minutes for 2-3 hours, or until the ice cream is firm and scoopable.
- Once the ice cream is frozen, you can scoop it into bowls and serve immediately.
