One-Pot Tomato Basil Pasta Meal Prep

This one-pot tomato basil pasta meal prep is a delicious and easy way to have a dairy-free pasta dish ready for your meals during the week. You can also add your favorite veggies or proteins to customize the recipe to your liking. Enjoy!

Ingredients:
  • 12 oz. dry pasta (penne or fusilli work well)
  • 2 tbsp. olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz.) crushed tomatoes
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 tsp. red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach leaves
  • Optional protein: cooked and crumbled Italian sausage or sliced grilled chicken
    Instructions:
  1. Cook the pasta according to the package directions until al dente. Drain and set aside.
  2. In the same pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft, about 5 minutes.
  3. Add the minced garlic and red pepper flakes (if using) and sauté for 1 minute more.
  4. Add the crushed tomatoes and chopped basil to the pot. Season with salt and black pepper to taste.
  5. Bring the sauce to a simmer and cook for 10-15 minutes or until the sauce has thickened.
  6. Add the halved cherry tomatoes and fresh spinach leaves to the pot. Stir until the spinach is wilted.
  7. Add the cooked pasta to the pot and toss until the sauce is evenly distributed.
  8. If desired, add cooked and crumbled Italian sausage or sliced grilled chicken to the pot and stir until heated through.
  9. Divide the pasta among four meal prep containers and let cool to room temperature before storing in the refrigerator.
