One-Pot Tomato Basil Pasta Meal Prep

This one-pot tomato basil pasta meal prep is a delicious and easy way to have a dairy-free pasta dish ready for your meals during the week. You can also add your favorite veggies or proteins to customize the recipe to your liking. Enjoy!
Ingredients:- 12 oz. dry pasta (penne or fusilli work well)
- 2 tbsp. olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz.) crushed tomatoes
- 1/4 cup fresh basil leaves, chopped
- 1/2 tsp. red pepper flakes (optional)
- Salt and black pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach leaves
- Optional protein: cooked and crumbled Italian sausage or sliced grilled chicken
- Instructions:
- Cook the pasta according to the package directions until al dente. Drain and set aside.
- In the same pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft, about 5 minutes.
- Add the minced garlic and red pepper flakes (if using) and sauté for 1 minute more.
- Add the crushed tomatoes and chopped basil to the pot. Season with salt and black pepper to taste.
- Bring the sauce to a simmer and cook for 10-15 minutes or until the sauce has thickened.
- Add the halved cherry tomatoes and fresh spinach leaves to the pot. Stir until the spinach is wilted.
- Add the cooked pasta to the pot and toss until the sauce is evenly distributed.
- If desired, add cooked and crumbled Italian sausage or sliced grilled chicken to the pot and stir until heated through.
- Divide the pasta among four meal prep containers and let cool to room temperature before storing in the refrigerator.
