  1. Heat the coconut oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, grated ginger, curry powder, turmeric, cumin, coriander, and cayenne pepper (if using) to the pot. Stir until fragrant, about 1 minute.
  3. Add the diced tomatoes (with their juice), coconut milk, and drained chickpeas to the pot. Stir until well combined.
  4. Bring the curry to a simmer and cook for 15-20 minutes or until the sauce has thickened.
  5. Add the fresh spinach leaves to the pot and stir until they are wilted.
  6. Season the curry with salt and black pepper to taste.
  7. Serve the curry hot over cooked rice or with naan bread.
