- Heat the coconut oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, grated ginger, curry powder, turmeric, cumin, coriander, and cayenne pepper (if using) to the pot. Stir until fragrant, about 1 minute.
- Add the diced tomatoes (with their juice), coconut milk, and drained chickpeas to the pot. Stir until well combined.
- Bring the curry to a simmer and cook for 15-20 minutes or until the sauce has thickened.
- Add the fresh spinach leaves to the pot and stir until they are wilted.
- Season the curry with salt and black pepper to taste.
- Serve the curry hot over cooked rice or with naan bread.
