Chickpea Salad

This chickpea salad is a quick and easy meal prep option that is also healthy and delicious. You can also add some feta cheese or grilled chicken to the salad if you prefer a bit more protein. Enjoy!
Ingredients:- 2 cans chickpeas, rinsed and drained
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 English cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 tsp. honey
- 1/2 tsp. ground cumin
- Salt and black pepper to taste
- Instructions:
- In a large bowl, combine the chickpeas, diced bell peppers, red onion, and diced cucumber.
- Add the chopped parsley and mint to the bowl and stir to combine.
- In a small bowl, whisk together the lemon juice, olive oil, honey, ground cumin, salt, and black pepper.
- Pour the dressing over the chickpea salad and toss to coat.
- Divide the chickpea salad into individual meal prep containers. Allow it to cool, then store in the refrigerator for up to 4 days.
