Chickpea Salad

This chickpea salad is a quick and easy meal prep option that is also healthy and delicious. You can also add some feta cheese or grilled chicken to the salad if you prefer a bit more protein. Enjoy!

Ingredients:
  • 2 cans chickpeas, rinsed and drained
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 English cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tsp. honey
  • 1/2 tsp. ground cumin
  • Salt and black pepper to taste
    Instructions:
  1. In a large bowl, combine the chickpeas, diced bell peppers, red onion, and diced cucumber.
  2. Add the chopped parsley and mint to the bowl and stir to combine.
  3. In a small bowl, whisk together the lemon juice, olive oil, honey, ground cumin, salt, and black pepper.
  4. Pour the dressing over the chickpea salad and toss to coat.
  5. Divide the chickpea salad into individual meal prep containers. Allow it to cool, then store in the refrigerator for up to 4 days.
